A recent survey in the newspaper Sud-Ouest showed that local dishes remained most popular:-

  1. Magret de Canard (lean duck breast from a duck fattened for foie gras)
  2. l’Entrecote à la Bordelaise (steak in red wine with shallots)
  3. Cassoulet (rich bean casserole with duck/goose, sausage, pork and haricot beans)
  4. Poulet Basquaise – chicken with peppers, Bayonne ham, tomatoes, onion, garlic and white wine

Cuisine in the south west relies heavily on duck and goose fat – the best roast potatoes are cooked in duck or goose fat – it’s a little known fact that as well as tasting great, goose fat is also good for you in comparison to other animal fats. It is high in ‘heart healthy’ monounsaturated fats which can lower blood cholesterol level. For more info head over to the Goose Fat Information Service
